Chef Looks to Tackle DC with NYC Success

Daniel Boulud, noted French chef known for his success in providing some of New York City’s finest in fine dining, plans to apply his methods to a new establishment in Washington, D.C., which will be called DBGB Kitchen and Bar.  An article recently completed by The Washington Post noted a celebratory dinner party thrown by Boulud which managed to easily pull in thirty-five of D.C.’s most noteworthy chefs; the event was to commemorate the planed opening of DBGB, rumored to be opening its doors as of Labor Day.

The event pulled in some of the most well-known chefs the District has to offer, including Frank Ruta and Ris Lacoste, among several others, some of which weren’t even on the invitees list but which were allowed to enjoy in the hospitality and food regardless.  Boulud did quite a bit of the cooking, while also observing Ed Scarpone, his executive sous-chef who will be responsible for the majority of the tasks behind the operations of DBGB.  Food provided varied greatly, from baked Alaska, to beets with yogurt, to blood sausages.

The explanations behind the event have varied, depending on the source asked.  Many believed Boulud hoped to introduce Scarpone to the local network of chefs, in the hopes of getting a lay of the land in terms of local suppliers and farmers.  It is also believed it may have been Boulud seizing an opportunity to reach out and mentor an entire generation of chefs from the District.  Alternatively, bread baker Furstenberg believes this may have been a show of hospitality—a peace offering to assuage any hostility felt by existing D.C. chefs at the prospect of a celebrity chef entering and infringing on the neighborhood.

DBGB, named after New York’s defunct and infamous punk-rock focused club CBGB, seeks to embrace the informal feel entering the District.  The establishment is also hoping to pay homage to Bowery neighborhood’s history as a restaurant supply district.  The menu is a nice meeting of French, American and other various influences and will feature another customized burger, as created by Boulud himself; the chef has a notoriety for creating the first premium burger, with his invention of the DB burger.  Boulud acknowledged that he is cooking up a specific patty for DBGB, with origins in District specific ingredients, but refused to provide any further details on what to expect.
